I am still getting used to calling Albuquerque home. We left Colorado after a fun filled week with the bf's family and returned home to the kitties who missed us terribly. We had a good time in colorado and spent new years together. New Years is sort of our anniversary so bf took me to the aquarium (our first date) in colorado which was awesome we had dinner there and then went to a little brewery for drinks and our midnight kisses! Of course just my luck upon returning home I caught a nasty cold and have been spending time trying to stay warm and recuperate. I was planning a menu list for the next few weeks so that I could make some awesome dinners when, bf returned home from work with some not so awesome news. It looks like the training he was going to be doing in march got moved up and he is leaving Monday for six weeks. Then of course monday came and his flight was canceled YAY! but he still had to leave eventually and left Wednesday. =( Not exactly how I had planned things kinda hard knowing I am going to be in this new place alone for the next month and a half but I have to make the best of it and just remember it's only six weeks and then he will be back home with me. Talk about a rough break. Sigh. Well looks like I'll be spending the next few weeks looking for a job and trying to get started in school which starts on the eighteenth. At least I will have things to keep me busy.

I'm here!

So I made it! I've been in Albuquerque for almost two weeks now. I am all unpacked and mostly settled in and the cats are adjusting pretty well to life.

I left on the 14th of December and the drive was long and tiring and the cats had a fun scare with the boarder patrol dog who got to sniff their carriers.Other than that I made it here okay and spent a week unpacking and getting things ready for boyfriends parents and sister to get here. They got here on the 23rd and it's now the 26th. It was my first Christmas without any of my family but it was okay I only got a little teary eyed right before bed. Wish I would have though of it and I could have taken some pictures of the awesome food I cooked. I did breakfast casserole and coffee cake for breakfast and I made the chocolate and apple pies for dessert. We had a good Christmas and I got lots of awesome stuff for cooking. Mostly I got cooking stuff LOL but it was cool I got a lot of stuff I needed and wanted so that I can learn to be a good cook someday and BF's sister got me the hello Kitty toaster you know the one that toasts her face into the bread! Yeah pretty excited about that one! =) well this seems like a pretty decent update so I'm gonna wrap it up. Headed to colorado tomorrow for a week should be fun and cold =P

My Adventure!

Well that's it there's no turning back...okay if i really wanted to I could change my mind but I would have to be insane to do that. I've turned in my notice at work and the move is less than a month away! I can't wait!!

My sister is here and I have a yucky cold. I'm super medicating myself in hopes I will be better soon though.

I'm writing a blog at school during Astronomy because they are going over the test and I pretty much feel like everyone is being a cry baby because they didn't study so they got crappy grades. I got a crappy grade but I don't feel like crying about it.

However I do feel like crying about the fact that I work for a bunch of jerks and they seem to feel that it is absolutely unnecessary to ever give me time off so that I can visit my boyfriend. I am supposed to leave either tonight or tomorrow to go see my love but work has made every effort possible to fuck me over so that I cannot get my shift covered Friday. Now Bobby has been very accommodating and comes to see me when work wont give me the time off but I am about to move to this new city in a new state and Id kinda like to go spend sometime getting used to it before It's time for me to actually move. Unreasonable I know. Sigh well I'm going to go back to paying attention to my teacher. btw 36 days!!! ^_^

So much change

There are so many things going on in such a short time.

Sister is coming to visit in a few weeks and I couldn't be more thrilled. She is probably my best friend in the whole world so I am really excited to get to see her for a week and then they will be living in the states again so I can just hop on a plane for a few hours and crash her house =).


Other than that the big move is coming up in 41 days! I have lots of insane school work to do. Which is somewhat stressing because I know if the move is in 41 days then my finals are in about 38ish and my big projects are only about two weeks or so away. Time to get down to the grind...

Halloween 2010

"bobby" came to visit this weekend. Only 44 more days until I move to Albuquerque! It cant come soon enough! I have just about the whole house packed, letting work know I'm leaving in a few short weeks and getting everything figured out with school.

I pretty much cant wait. Especially on the days following his visits...I go from dealing with it knowing I'll see him soon, to seeing him and being super happy for a few days, to being super sad when he goes and it takes a few days for me to stop being so melancholy.

Over all we had a fabulous weekend and as you can see we were super cute in our cowgirl and turtle costumes ;) xoxo.

It's crazy that one year ago I was in Japan and was in a completely different mindset than I am now. I am so glad I met bobby I'm pretty damn sure this is the best love I've even fallen in.

A brand new chapter

I haven't made a post in a very long time but I have decided I need to start posting again. Especially because of the big changes going on in my life. Well in Japan I met a cute boy, came home and kept in contact, 8 months later when he got stationed in the states he came to stay with me, I fell madly in love in two weeks and have made the decision to run away to Albuquerque to live with him. long story short successful! well now the fun part *sarcasm*I get to learn what its like to really miss a man. I cannot move until this semester of school is over in December which in hindsight is not actually that long at all but none the less I still miss him terribly.

Pesto!

Alright seriously this was cool. Did you know how much there is to learn about pesto? WOW!

So, I research everything I cook and try to find the most amazing authentic awesome recipes. I did a lot of digging on this one and there are soooo many different variations! Well, after all my searching I deducted that I wanted to go the super authentic route. I didn't really use a specific recipe I did a lot of it by taste and look and I combined the ideas from recipes I read. I decided to use a pestle.

Pesto

You will need:

Pine nuts
Fresh basil (the smallest freshest leaves possible)
Olive oil
Garlic
Salt
Parmesan cheese

Now, I have done this twice and before I do it again I will be getting a larger pestle.

First you will need a large bunch of basil. Pick all of the leaves off and if there is a large vein running through the leaf pull the leaf off around it. wash all your leaves and lay them out on a towel to air dry.
while you are waiting I would slightly toast your pine nuts to give them some extra flavor (you can also use walnuts). You want to use about a handful of pine nuts and just dry roast them in a small pan. (set aside to cool)
Next roughly Chop up two to three cloves of garlic depending on taste (this makes it easier to crush in the pestle)
here comes the fun part...lol...toss the pine nuts and garlic in to the pestle and begin crushing.
after that's pretty smashed up add in some leaves. little by little keep adding the leaves until you have added them all.
Make sure to taste is every now and then to make sure you like the flavor (it's a super concentrated taste so be objective to that fact.)
After you have all the leaves in add the cheese (you can use just the shredded stuff in a can but I'd recommend getting the good stuff) use about a 1/2 cup and put in a few pinches of salt (i prefer sea salt)
then add the olive oil.

tips:
This can all be done with a food processor if you prefer however, DO NOT use extra virgin olive oil it does something funny to it and can ruin the taste.

You can also just chop everything very fine.

(with these other methods it's still good it just doesn't taste quite the same.)

Japan woo!

So I really haven't blogged in well months and I apologize for that. Now that I am in Japan and I have a considerably smaller list of tasks to accomplish each day I am going to try remedy that and begin writing again. yay =) so this one is short and sweet. Well I am in Japan and I love it, other than the small fact that my sisters dog feels it's necessary to lick my entire arm as I try to type, but really its great here kinda rainy but its pretty and i like it and it's good to see my sis again. So before I left I got fired from the job from hell thank god didn't wanna work there anymore anyhow and then I spent a few months just working as a waitress before I left. I was wrong about Mr. X what can I say I get to passionate about things in the beginning and then realize I was diluted. He was a cool guy don't get me wrong but us...together...nah not to mention I sorta fell for his best friend....hahaha drama actually not really because after my last blog about him he quit and we fell out of contact and I fell for his bestie man I'm a jerk huh. So to sum things all up Im doing good great actually, gonna enjoy my time in Japan, and try not to think about how my love life is still just as fucked up as always. I'll blog again later this week and try to find more interesting things to say until then <3
